Urutan Babi - Traditional Balinese sausage
"Urutan Babi" is indeed a traditional Balinese sausage made with pork and various spices. Here's a simplified recipe to make Urutan Babi at home:
Ingredients:
- 500 grams (about 1 lb) ground pork
- 2 tablespoons vegetable oil
- Banana leaves or sausage casings, for wrapping
- Cooking twine or toothpicks, for securing the sausages
For the Spice Paste (Base Genep):
- 6 shallots, peeled and chopped
- 4 cloves garlic, peeled and chopped
- 2 red chili peppers, chopped (adjust according to your spice preference)
- 2 bird's eye chili peppers, chopped (adjust according to your spice preference)
- 2 stalks lemongrass, white part only, thinly sliced
- 1 thumb-sized piece of galangal, peeled and chopped
- 1 thumb-sized piece of ginger, peeled and chopped
- 3 kaffir lime leaves, thinly sliced
- 1 teaspoon shrimp paste (terasi)
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1 teaspoon sugar
Instructions:
Prepare the Spice Paste (Base Genep):
- In a blender or food processor, combine all the ingredients for the spice paste and blend until smooth. This mixture is called Base Genep and forms the flavor base for Urutan Babi.
Mix the Spice Paste with the Pork:
- In a large bowl, combine the ground pork with the Base Genep spice paste. Mix well until the pork is thoroughly coated with the spices.
Shape the Sausages:
- If using banana leaves, cut them into rectangular pieces large enough to wrap the sausages. If using sausage casings, prepare them according to the manufacturer's instructions.
- Take a portion of the seasoned pork mixture and shape it into a sausage, about 10-12 cm (4-5 inches) long. Repeat with the remaining pork mixture.
Wrap the Sausages:
- If using banana leaves, wrap each sausage in a piece of banana leaf, folding it over and securing the edges with cooking twine or toothpicks.
- If using sausage casings, stuff the seasoned pork mixture into the casings, twisting them at regular intervals to form individual sausages.
Cook the Sausages:
- If using banana leaves, steam the wrapped sausages in a steamer for about 30-40 minutes, or until cooked through.
- If using sausage casings, grill or pan-fry the sausages over medium heat until cooked through and browned on all sides.
Serve:
- Once cooked, carefully open the banana leaf packets or remove the sausages from the casings.
- Serve Urutan Babi hot with steamed rice, sambal matah (Balinese chili relish), and other traditional Balinese side dishes.
