JUKUT DON KELOR - Moringa Leaf Soup

 Sayur Kelor, or Moringa Leaf Soup, is a nutritious and delicious Indonesian dish made with moringa leaves. Here's a recipe to make Sayur Kelor at home:


Ingredients:

  • 2 cups moringa leaves, washed and removed from the stems
  • 2 cups coconut milk
  • 2 cups vegetable broth or water

  • 2 shallots, thinly sliced
  • 2 red chili peppers, sliced (optional, for heat)
  • 1 tomato, chopped
  • 1 tablespoon vegetable oil

Instructions:

  1. Prepare the moringa leaves:

    • Wash the moringa leaves thoroughly under cold running water to remove any dirt or grit.
    • Remove the leaves from the stems and discard the stems. Set the leaves aside.
  2. Cook the aromatics:

    • Heat vegetable oil in a pot over medium heat.
    • Add minced garlic and thinly sliced shallots to the pot and sauté until fragrant and slightly golden brown, about 2-3 minutes.
  3. Add the moringa leaves:

    • Add the washed moringa leaves to the pot and stir well to combine with the aromatics.
  4. Add the coconut milk and broth:

    • Pour in the coconut milk and vegetable broth (or water) into the pot, ensuring that the moringa leaves are submerged.
    • Add the sliced red chili peppers (if using) and chopped tomato to the pot.
    • Season with salt and pepper to taste. Stir to combine.
  5. Simmer the soup:

    • Bring the soup to a gentle simmer over medium-low heat.
    • Let the soup simmer for about 10-15 minutes, or until the moringa leaves are tender and the flavors have melded together.
  6. Adjust the seasoning:

    • Taste the soup and adjust the seasoning with more salt and pepper if needed.
  7. Serve:

    • Ladle the Sayur Kelor into serving bowls.
    • Garnish with fried shallots (bawang goreng) if desired.
    • Serve hot as a comforting and nutritious soup.
