Ingredients:
- 10-15 red chili peppers (adjust according to your spice preference)
- 5 shallots, peeled
- 3 cloves garlic, peeled
- 1 medium-sized tomato, chopped
- 1 teaspoon shrimp paste (terasi), toasted
- 1 tablespoon palm sugar or brown sugar
- Juice of 1 lime
- Salt to taste
- Vegetable oil for frying

Prepare the ingredients:
- If you prefer a milder sambal, you can remove the seeds from the chili peppers. Otherwise, leave them intact for extra heat.
- Toast the shrimp paste (terasi) in a dry pan over low heat for a few minutes until fragrant. Be careful not to burn it.
- Chop the chili peppers, shallots, and garlic into smaller pieces to make them easier to blend.
Blend the ingredients:
- In a blender or food processor, combine the chopped chili peppers, shallots, garlic, chopped tomato, toasted shrimp paste, palm sugar, lime juice, and a pinch of salt.
- Blend until you have a smooth paste. You may need to scrape down the sides of the blender or food processor and blend again to ensure everything is well combined.
Fry the sambal:
- Heat a little vegetable oil in a pan over medium heat.
- Add the blended sambal mixture to the pan and cook, stirring frequently, for about 10-15 minutes, or until the sambal darkens in color and the flavors have melded together. Be careful as the sambal may splatter.
- Adjust the seasoning with salt and sugar according to your taste preference. If you prefer a sweeter sambal, you can add more sugar.
Let it cool:
- Once cooked, remove the sambal from the heat and let it cool to room temperature.
Serve:
- Transfer the Sambal Terasi to a clean jar or container.
- Serve it as a condiment alongside your favorite Indonesian dishes, such as fried rice, grilled meats, or satay.
