SAMSAM GULING - traditional Balinese dish of roasted suckling pig
"Samsam Guling" or "Babi Guling" is a traditional Balinese dish of roasted suckling pig. It's often served during special occasions and celebrations. While preparing authentic Babi Guling can be quite elaborate and requires special equipment, here's a simplified recipe to make a version of Samsam Guling at home:
Ingredients:
For the Spice Paste (Basa Genep):
- 6 shallots, peeled and chopped
- 4 cloves garlic, peeled and chopped
- 2 red chili peppers, chopped
- 2 bird's eye chili peppers, chopped
- 2 stalks lemongrass, white part only, thinly sliced
- 1 thumb-sized piece of galangal, peeled and chopped
- 1 thumb-sized piece of ginger, peeled and chopped
- 3 kaffir lime leaves, thinly sliced
- 1 teaspoon shrimp paste (terasi)
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1 teaspoon sugar
For the Pork:
- 1 kg (about 2 lbs) pork shoulder or pork belly, skin on
- 2 tablespoons vegetable oil
- Banana leaves (optional, for wrapping)
- Cooking twine (optional, for tying)
Instructions:
Prepare the Spice Paste (Basa Genep):
- In a blender or food processor, combine all the ingredients for the spice paste and blend until smooth. This mixture is called Basa Genep and forms the flavor base for Samsam Guling.
Marinate the Pork:
- Score the pork skin with a sharp knife, making shallow cuts in a criss-cross pattern. This will help the marinade penetrate the meat and ensure crispy skin when roasted.
- Rub the Basa Genep spice paste all over the pork, making sure to get it into the cuts in the skin. Massage the marinade into the meat.
- Cover the pork and let it marinate in the refrigerator for at least 4 hours, preferably overnight, to allow the flavors to develop.
Roast the Pork:
- Preheat your oven to 180°C (350°F).
- Place the marinated pork on a roasting rack set inside a roasting pan, skin side up.
- Drizzle the vegetable oil over the pork skin. This will help it crisp up during roasting.
- If using banana leaves, wrap the pork in the leaves before placing it on the roasting rack. This will help keep the meat moist during cooking.
- Roast the pork in the preheated oven for about 2-3 hours, or until the skin is golden brown and crispy, and the meat is tender and cooked through. Baste the pork occasionally with the juices that accumulate in the roasting pan to keep it moist.
Serve:
- Once the pork is cooked, remove it from the oven and let it rest for a few minutes before slicing.
- Slice the roasted pork and arrange it on a serving platter.
- Serve Samsam Guling hot with steamed rice, lawar (Balinese vegetable salad), sambal matah (Balinese chili relish), and other traditional Balinese accompaniments.
