Tum Babi - traditional Balinese dish made with minced pork mixed with spices

 "Tum Babi" is a traditional Balinese dish made with minced pork mixed with spices, wrapped in banana leaves, and then steamed or grilled until cooked through. It's flavorful and aromatic, typically served as part of a Balinese meal. Here's a recipe to make Tum Babi at home:


Ingredients:

For the Spice Paste (Base Genep):

  • 6 shallots, peeled and chopped
  • 4 cloves garlic, peeled and chopped
  • 2 red chili peppers, chopped (adjust according to your spice preference)
  • 2 bird's eye chili peppers, chopped (adjust according to your spice preference)
  • 2 stalks lemongrass, white part only, thinly sliced
  • 1 thumb-sized piece of galangal, peeled and chopped
  • 1 thumb-sized piece of ginger, peeled and chopped
  • 3 kaffir lime leaves, thinly sliced
  • 1 teaspoon shrimp paste (terasi)
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon sugar

For the Pork:

  • 500 grams (about 1 lb) ground pork
  • 2 tablespoons vegetable oil
  • Banana leaves, for wrapping
  • Cooking twine or toothpicks, for securing the banana leaves

Instructions:

  1. Prepare the Spice Paste (Base Genep):

    • In a blender or food processor, combine all the ingredients for the spice paste and blend until smooth. This mixture is called Base Genep and forms the flavor base for Tum Babi.
  2. Mix the Spice Paste with the Pork:

    • In a large bowl, combine the ground pork with the Base Genep spice paste. Mix well until the pork is thoroughly coated with the spices.
  3. Prepare the Banana Leaves:

    • Rinse the banana leaves under cold water and pat them dry with paper towels.
    • Cut the banana leaves into square pieces, large enough to wrap individual portions of the pork mixture.
  4. Wrap and Cook the Tum Babi:

    • Place a portion of the seasoned pork mixture onto a piece of banana leaf.
    • Fold the banana leaf over the pork to enclose it completely, forming a packet. Secure the edges with cooking twine or toothpicks.
    • Repeat the process with the remaining pork mixture and banana leaves.
    • Steam the wrapped Tum Babi packets in a steamer for about 30-40 minutes, or until the pork is cooked through. Alternatively, you can grill the packets over medium heat until the pork is cooked and the banana leaves are charred.
  5. Serve:

    • Once cooked, carefully open the banana leaf packets and transfer the Tum Babi to a serving platter.
    • Serve hot with steamed rice and your favorite Balinese side dishes.
