SAMBAL MATAH

Ingredients:

  • 5 shallots, thinly sliced
  • 5-7 bird's eye chilies or red chilies, thinly sliced (adjust to taste)
  • 2-3 stalks of lemongrass, white part only, thinly sliced
  • 2 kaffir lime leaves, finely shredded
  • 2 tablespoons of lime juice
  • 1 tablespoon of cooking oil
  • 1 teaspoon of shrimp paste (terasi), toasted (optional)
  • Salt and sugar to taste

Instructions:

  1. Prepare the Ingredients:

    • Thinly slice the shallots, bird's eye chilies, and lemongrass.
    • Finely shred the kaffir lime leaves.
    • If using shrimp paste, toast it in a dry pan over low heat until fragrant.
  2. Mix the Ingredients:

    • In a mixing bowl, combine the sliced shallots, sliced chilies, sliced lemongrass, and shredded kaffir lime leaves.
    • Add lime juice, cooking oil, and toasted shrimp paste (if using).
    • Season with salt and sugar to taste.
  3. Mix Well:

    • Stir all the ingredients together until well combined.
  4. Adjust the Flavor:

    • Taste the Sambal Matah and adjust the seasoning according to your preference. You can add more lime juice, salt, or sugar if needed.
  5. Let it Rest:

    • Let the Sambal Matah sit for at least 15-30 minutes to allow the flavors to meld together.
  6. Serve:

    • Serve the Sambal Matah as a condiment or dipping sauce alongside grilled meats, seafood, rice dishes, or anything else you desire.
