 "LAWAR PLEK" is a traditional Balinese dish that combines minced meat, grated coconut, and various spices. Here's a recipe for Lawar Plek:


Ingredients:

  • 500 grams of minced pork or chicken
  • 200 grams of grated coconut
  • 2 stalks of lemongrass, thinly sliced
  • 5 kaffir lime leaves, thinly sliced
  • 2 tablespoons of cooking oil
  • 2 teaspoons of salt, or to taste
  • 1 teaspoon of sugar
  • 1 teaspoon of shrimp paste (terasi), toasted
  • 3 shallots, finely chopped
  • 3 cloves of garlic, finely chopped
  • 5 red chilies, finely chopped
  • 2 teaspoons of galangal, finely chopped
  • 2 teaspoons of turmeric, finely chopped
  • 1 teaspoon of palm sugar
  • 1 teaspoon of tamarind paste
  • 1 cup of water

Instructions:

  1. In a large skillet, heat the cooking oil over medium heat. Add the minced meat and cook until browned.
  2. Add the grated coconut to the skillet and cook until fragrant and slightly browned.
  3. In a mortar and pestle, pound together the toasted shrimp paste, shallots, garlic, red chilies, galangal, and turmeric until it forms a smooth paste.
  4. Add the spice paste to the skillet and cook for another 2-3 minutes until fragrant.
  5. Add the sliced lemongrass and kaffir lime leaves to the skillet and stir well.
  6. Season the mixture with salt, sugar, palm sugar, and tamarind paste. Stir well to combine.
  7. Pour in the water and bring the mixture to a simmer. Allow it to cook for about 10-15 minutes until the flavors have melded together and the liquid has reduced slightly.
  8. Once cooked, remove the skillet from the heat and let it cool slightly.
  9. Serve the Lawar Plek warm or at room temperature. It can be enjoyed as a side dish with rice or as part of a larger Balinese meal.

Note: Adjust the seasoning according to your taste preferences. You can also add other ingredients like long beans, snake beans, or bean sprouts for added texture and flavor.
