Ingredients

  • 500 grams young jackfruit, thinly sliced
  • 200 grams grated coconut
  • 2 tablespoons cooking oil
  • 2 kaffir lime leaves, thinly sliced
  • 2 stalks lemongrass, thinly sliced
  • 2 red chilies, finely chopped
  • 3 shallots, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 teaspoon shrimp paste (terasi), toasted
  • 1 teaspoon turmeric, finely chopped (or 1 teaspoon turmeric powder)
  • 1 teaspoon galangal, finely chopped (or 1 teaspoon galangal powder)
  • 1 teaspoon salt, or to taste
  • 1 teaspoon palm sugar, or to taste
  • 1 tablespoon tamarind paste
  • 1 cup water

Instructions:

  1. Heat the cooking oil in a large skillet over medium heat.
  2. Add the sliced jackfruit to the skillet and cook until slightly tender, about 5-7 minutes.
  3. Add the grated coconut to the skillet and cook until fragrant and slightly golden brown, stirring frequently to prevent burning.
  4. In a mortar and pestle, pound together the toasted shrimp paste, shallots, garlic, red chilies, turmeric, and galangal until it forms a smooth paste.
  5. Add the spice paste to the skillet and cook for another 2-3 minutes until fragrant.
  6. Add the sliced lemongrass and kaffir lime leaves to the skillet and stir well.
  7. Season the mixture with salt, palm sugar, and tamarind paste. Stir well to combine.
  8. Pour in the water and bring the mixture to a simmer. Allow it to cook for about 10-15 minutes until the flavors have melded together and the liquid has reduced slightly.
  9. Once cooked, remove the skillet from the heat and let it cool slightly.
  10. Serve the Lawar Nangka warm or at room temperature. It can be enjoyed as a side dish with rice or as part of a larger Balinese meal.

Note: Adjust the seasoning according to your taste preferences. You can also add other ingredients like fried shallots, lime juice, or chopped herbs for additional flavor.
