LAWAR KACANG - traditional Balinese dish

  • Banana leaves for serving (optional)

Spice Paste (Bumbu):

  • 4 cloves of garlic
  • 4 shallots
  • 2 red chilies
  • 2 candlenuts or macadamia nuts
  • 1 teaspoon of coriander seeds
  • 1 teaspoon of shrimp paste (terasi), toasted

Instructions:

  1. Prepare the spice paste (bumbu) by grinding all the ingredients in a mortar and pestle or a food processor until smooth.
  2. Blanch the green beans in boiling water for about 2-3 minutes until they are slightly tender. Drain and set aside.
  3. Heat the cooking oil in a pan over medium heat. Add the minced garlic, shallots, and red chilies. Sauté until fragrant.
  4. Add the spice paste (bumbu) and cook for another 2-3 minutes until the raw smell disappears.
  5. Add the blanched green beans to the pan and cook for a few minutes until they are cooked through but still crisp.
  6. Add the shredded kaffir lime leaves, sliced lemongrass, and diced tomatoes. Cook for another 2-3 minutes.
  7. Add the toasted grated coconut to the pan and mix well with the green beans mixture.
  8. Season with shrimp paste, palm sugar, salt, and lime juice. Adjust the seasoning according to your taste.
  9. Cook for another 2-3 minutes until all the flavors are well combined.
  10. Remove from heat and let it cool slightly.
  11. Serve the Lawar Kacang on a serving platter lined with banana leaves (if using), or simply serve it in a bowl.
  12. Enjoy your Lawar Kacang as a side dish or with steamed rice.
