Lawar Daun Belimbing - traditional Balinese dish made with starfruit leaves

 Lawar Daun Belimbing is a traditional Balinese dish made with starfruit leaves as one of its main ingredients. Here's a recipe for Lawar Daun Belimbing:


Ingredients:

  • 200 grams of young starfruit leaves (daun belimbing), washed and finely chopped
  • 200 grams of grated coconut
  • 2 tablespoons of cooking oil
  • 2 kaffir lime leaves, thinly sliced
  • 2 stalks of lemongrass, thinly sliced
  • 2 red chilies, finely chopped
  • 3 shallots, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 teaspoon of shrimp paste (terasi), toasted
  • 1 teaspoon of turmeric, finely chopped (or 1 teaspoon turmeric powder)
  • 1 teaspoon of galangal, finely chopped (or 1 teaspoon galangal powder)
  • 1 teaspoon of salt, or to taste
  • 1 teaspoon of palm sugar, or to taste
  • 1 tablespoon of tamarind paste
  • 1 cup of water

Instructions:

  1. Heat the cooking oil in a large skillet over medium heat.
  2. Add the chopped starfruit leaves to the skillet and cook until wilted, about 5-7 minutes.
  3. Add the grated coconut to the skillet and cook until fragrant and slightly golden brown, stirring frequently to prevent burning.
  4. In a mortar and pestle, pound together the toasted shrimp paste, shallots, garlic, red chilies, turmeric, and galangal until it forms a smooth paste.
  5. Add the spice paste to the skillet and cook for another 2-3 minutes until fragrant.
  6. Add the sliced lemongrass and kaffir lime leaves to the skillet and stir well.
  7. Season the mixture with salt, palm sugar, and tamarind paste. Stir well to combine.
  8. Pour in the water and bring the mixture to a simmer. Allow it to cook for about 10-15 minutes until the flavors have melded together and the liquid has reduced slightly.
  9. Once cooked, remove the skillet from the heat and let it cool slightly.
  10. Serve the Lawar Daun Belimbing warm or at room temperature. It can be enjoyed as a side dish with rice or as part of a larger Balinese meal.

Note: Adjust the seasoning according to your taste preferences. You can also add other ingredients like fried shallots, lime juice, or chopped herbs for additional flavor.
