JUKUT NANGKA - Young Jackfruit Curry
Jukut Nangka, or young jackfruit curry, is a popular Indonesian dish known for its savory and aromatic flavors. Here's a recipe to make Sayur Nangka at home:
Ingredients:
- 500 grams (about 1 lb) young jackfruit, cleaned and cut into bite-sized pieces
- 200 grams (about 7 oz) coconut milk
- 2 cups water or vegetable broth
- 2 red chili peppers, sliced (optional, for heat)
- 2 shallots, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon shrimp paste (terasi), toasted
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon salt, or to taste
- 1 teaspoon sugar, or to taste
- 2 tablespoons vegetable oil
Instructions:
Prepare the young jackfruit:
- Remove the outer skin of the young jackfruit and discard.
- Cut the young jackfruit into bite-sized pieces, removing the core and any tough parts.
Make the spice paste:
- In a mortar and pestle or food processor, grind together the shallots, garlic, toasted shrimp paste, ground turmeric, ground coriander, and ground cumin until it forms a smooth paste.
Cook the spice paste:
- Heat vegetable oil in a large pot over medium heat.
- Add the spice paste to the pot and sauté until fragrant, about 2-3 minutes.
Add the young jackfruit:
- Add the chopped young jackfruit to the pot and stir to coat it with the spice paste.
- Pour in the water or vegetable broth and bring the mixture to a simmer.
- Cover the pot and let the young jackfruit cook until tender, about 20-30 minutes.
Add coconut milk and season:
- Once the young jackfruit is tender, stir in the coconut milk.
- Season the curry with salt and sugar to taste. Adjust the seasoning according to your preference.
- If using red chili peppers for heat, add them to the curry at this stage.
Simmer and serve:
- Let the curry simmer for another 5-10 minutes to allow the flavors to meld together.
- Once done, remove the pot from the heat.
Serve:
- Ladle the Sayur Nangka into serving bowls.
- Serve hot with steamed rice as a comforting and nutritious meal.
