Jukut Don Sela - Cassava Leaf Soup

 Jukut Don Sela, or Cassava Leaf Soup, is a traditional Indonesian dish made with cassava leaves cooked in a flavorful broth. Here's a simple recipe to make Sayur Daun Singkong at home:


Ingredients:

  • 500 grams (about 1 lb) cassava leaves, cleaned and chopped
  • 200 grams (about 7 oz) coconut milk
  • 2 cups water or vegetable broth
  • 2 red chili peppers, sliced (optional, for heat)
  • 2 shallots, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon shrimp paste (terasi), toasted
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon salt, or to taste
  • 1 teaspoon sugar, or to taste
  • 2 tablespoons vegetable oil

Instructions:

  1. Prepare the cassava leaves:

    • Wash the cassava leaves thoroughly to remove any dirt or grit.
    • Remove the tough stems and chop the leaves into bite-sized pieces.
  2. Make the spice paste:

    • In a mortar and pestle or food processor, grind together the shallots, garlic, toasted shrimp paste, ground turmeric, and ground coriander until it forms a smooth paste.
  3. Cook the spice paste:

    • Heat vegetable oil in a large pot over medium heat.
    • Add the spice paste to the pot and sauté until fragrant, about 2-3 minutes.
  4. Add the cassava leaves:

    • Add the chopped cassava leaves to the pot and stir to coat them with the spice paste.
    • Pour in the water or vegetable broth and bring the mixture to a simmer.
    • Cover the pot and let the cassava leaves cook until tender, about 15-20 minutes.
  5. Add coconut milk and season:

    • Once the cassava leaves are tender, stir in the coconut milk.
    • Season the soup with salt and sugar to taste. Adjust the seasoning according to your preference.
    • If using red chili peppers for heat, add them to the soup at this stage.
  6. Simmer and serve:

    • Let the soup simmer for another 5-10 minutes to allow the flavors to meld together.
    • Once done, remove the pot from the heat.
  7. Serve:

    • Ladle the Sayur Daun Singkong into serving bowls.
    • Serve hot with steamed rice as a comforting and nutritious meal.
