BEBEK TIMBUNGAN - traditional Balinese dish made with a variety of ingredients

 Timbungan is a traditional Balinese dish made with a variety of ingredients, usually including rice, meat or fish, vegetables, and spices, all cooked together in a banana leaf parcel. The ingredients and specific recipe can vary depending on personal preferences and regional variations. Here's a basic recipe for Timbungan Bali:


Ingredients:

  • Banana leaves (for wrapping)
  • 2 cups of rice (preferably Balinese rice)
  • 200 grams of duck,chicken, beef, pork, or fish (cut into small pieces)
  • 1 cup of coconut milk
  • 1 cup of water
  • 1 lemongrass stalk (bruised)
  • 2 kaffir lime leaves
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of grated ginger
  • 3 cloves of garlic (minced)
  • 2 shallots (minced)
  • 2 red chilies (sliced, seeds removed for less heat)
  • 1 tomato (sliced)
  • Salt to taste
  • Banana leaves for wrapping

Instructions:

  1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
  2. In a bowl, mix together the coconut milk, water, turmeric powder, grated ginger, minced garlic, minced shallots, sliced chilies, and salt.
  3. Add the rice to the coconut milk mixture and stir well to combine.
  4. Place a banana leaf on a flat surface. Spoon some of the rice mixture onto the center of the leaf.
  5. Top the rice with pieces of chicken, beef, pork, or fish, sliced tomato, lemongrass stalk, and kaffir lime leaves.
  6. Fold the banana leaf to enclose the filling and secure with toothpicks or kitchen twine.
  7. Repeat the process with the remaining ingredients until all the rice and filling are used up.
  8. Place the banana leaf parcels in a steamer and steam for about 30-40 minutes, or until the rice is cooked through and the filling is tender.
  9. Once cooked, carefully open the banana leaf parcels and serve the Timbungan hot.

You can adjust the ingredients and spices according to your taste preferences. Some variations of Timbungan may include additional ingredients such as vegetables like green beans, carrots, or bamboo shoots. Enjoy your traditional Balinese Timbungan!
