BABI KECAP - Indonesian Pork in Sweet Soy Sauce
Babi Kecap, or Indonesian Pork in Sweet Soy Sauce, is a delicious and flavorful dish that's popular in Indonesian cuisine. Here's a recipe to make Babi Kecap at home:
Ingredients:
- 500 grams (about 1 lb) pork belly or pork shoulder, cut into bite-sized pieces
- 4 tablespoons kecap manis (Indonesian sweet soy sauce)
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 onion, thinly sliced
- 2 red chili peppers, sliced (optional, for heat)
- 2 tomatoes, diced
- 1 teaspoon tamarind paste
- 1 teaspoon sugar
- Salt and pepper to taste
- Chopped green onions or cilantro for garnish
Instructions:
Marinate the pork:
- In a bowl, mix together 2 tablespoons of kecap manis and 1 tablespoon of soy sauce. Add the pork pieces to the marinade and toss until they are well coated. Set aside and let it marinate for at least 30 minutes.
Heat vegetable oil in a large pan or wok over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
Add the marinated pork to the pan and cook until browned on all sides, about 5-7 minutes.
Once the pork is browned, add sliced onions and red chili peppers (if using) to the pan. Cook until the onions are soft and translucent, about 3-4 minutes.
Stir in the diced tomatoes, tamarind paste, sugar, remaining 2 tablespoons of kecap manis, and 1 tablespoon of soy sauce. Mix well to combine.
Reduce the heat to low, cover the pan, and let the dish simmer for about 20-25 minutes, or until the pork is tender and cooked through. Stir occasionally to prevent sticking.
Once the pork is cooked and the sauce has thickened, taste and adjust the seasoning with salt and pepper if needed.
Garnish the Babi Kecap with chopped green onions or cilantro before serving.
