AYAM SAMBEL MATAH - delicious Balinese dish featuring chicken cooked with a spicy raw sauce
"Ayam Sambal Matah" is a delicious Indonesian dish featuring chicken cooked with a spicy raw sauce called "Sambal Matah." Here's a recipe to make Ayam Sambal Matah:
Ingredients:
For the Chicken:
- 500 grams of chicken breast or thighs, cut into bite-sized pieces
- 3 cloves of garlic, minced
- 2 shallots, minced
- 2 tablespoons of sweet soy sauce (kecap manis)
- 1 tablespoon of soy sauce
- 1 tablespoon of lime juice
- Salt and pepper to taste
- Cooking oil
For the Sambal Matah:
- 5 shallots, thinly sliced
- 3-5 red chilies (adjust to taste), thinly sliced
- 2-3 bird's eye chilies (optional), thinly sliced
- 2-3 stalks of lemongrass, white part only, thinly sliced
- 2 kaffir lime leaves, finely shredded
- 2 tablespoons of lime juice
- 1 tablespoon of cooking oil
- Salt and sugar to taste
Instructions:
1. Marinate the Chicken:
- In a bowl, combine the minced garlic, minced shallots, sweet soy sauce, soy sauce, lime juice, salt, and pepper.
- Add the chicken pieces to the marinade and mix well to coat.
- Let the chicken marinate for at least 30 minutes, or preferably overnight in the refrigerator for better flavor.
2. Prepare the Sambal Matah:
- In a separate bowl, combine the thinly sliced shallots, red chilies, bird's eye chilies (if using), sliced lemongrass, and shredded kaffir lime leaves.
- Add lime juice, cooking oil, salt, and sugar to taste. Mix well to combine.
- Set aside the Sambal Matah while you cook the chicken.
3. Cook the Chicken:
- Heat some cooking oil in a pan over medium heat.
- Add the marinated chicken pieces to the pan and cook until they are golden brown and cooked through, about 8-10 minutes.
- Once the chicken is cooked, remove it from the pan and set it aside.
4. Assemble the Dish:
- Arrange the cooked chicken pieces on a serving plate.
- Spoon the prepared Sambal Matah over the chicken.
- Serve immediately with steamed rice and enjoy your Ayam Sambal Matah!
