- 2 bird's eye chili peppers, chopped (adjust according to your spice preference)
- 2 lemongrass stalks, white part only, thinly sliced
- 2 tablespoons tamarind paste
- 2 tablespoons kecap manis (Indonesian sweet soy sauce)
- 1 tablespoon vegetable oil
- 1 teaspoon shrimp paste (terasi)
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon salt, or to taste
- 1 teaspoon sugar, optional (to balance flavors)

- Additional kecap manis for basting
- Lime wedges for serving

Prepare the Marinade:
- In a blender or food processor, combine the shallots, garlic, red chili peppers, bird's eye chili peppers, lemongrass, tamarind paste, kecap manis, vegetable oil, shrimp paste, ground coriander, ground cumin, ground turmeric, salt, and sugar (if using). Blend until you have a smooth marinade.
Marinate the Chicken:
