SATE BABI - Balinese-style pork satay
Here's a simplified recipe for Sate Babi, Balinese-style pork satay:
Ingredients:
For the marinade:
- 500 grams (about 1 lb) pork shoulder or pork loin, cut into small cubes
- 2 tablespoons kecap manis (sweet soy sauce)
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon turmeric powder
- 1 teaspoon ground ginger
- 1 teaspoon salt
- 1 teaspoon sugar
For the peanut sauce:
- 1 cup unsalted peanuts
- 2 cloves garlic, minced
- 1 shallot, minced
- 1 tablespoon vegetable oil
- 2 teaspoons shrimp paste (terasi)
- 2 teaspoons tamarind paste
- 2 teaspoons kecap manis (sweet soy sauce)
- 1 teaspoon sugar
- 1/2 cup water
- Salt to taste
- Red chili flakes or sliced red chili (optional, for heat)
For serving:
- Bamboo skewers, soaked in water for at least 30 minutes
- Sliced cucumber and shallots, for garnish
Instructions:
Marinate the pork:
- In a bowl, mix together the kecap manis, soy sauce, vegetable oil, minced garlic, ground coriander, ground cumin, turmeric powder, ground ginger, salt, and sugar to make the marinade.
- Add the pork cubes to the marinade and toss until they are well coated. Cover the bowl and refrigerate for at least 2 hours, or overnight, to allow the flavors to meld.
Make the peanut sauce:
- In a food processor or blender, grind the unsalted peanuts until finely chopped (but not completely smooth).
- Heat vegetable oil in a pan over medium heat. Add minced garlic and shallot, and sauté until fragrant.
- Add the ground peanuts, shrimp paste, tamarind paste, kecap manis, sugar, and water to the pan. Stir well to combine.
- Cook the sauce, stirring frequently, until it thickens to your desired consistency. If it becomes too thick, you can add more water to thin it out.
- Season the sauce with salt to taste. If you like it spicy, you can add red chili flakes or sliced red chili.
Assemble the satay:
- Thread the marinated pork cubes onto the soaked bamboo skewers, dividing them evenly among the skewers.
Grill the satay:
- Preheat your grill or barbecue to medium-high heat.
- Grill the pork satay skewers for about 3-4 minutes on each side, or until cooked through and nicely charred on the outside.
Serve:
- Arrange the grilled satay skewers on a serving platter.
- Serve the satay hot with the peanut sauce on the side.
