 "Sambal Goreng Hati" is a popular Indonesian dish made with chicken livers cooked in a spicy chili paste. Here's a basic recipe to make Sambal Ati:


Ingredients:

  • 500 grams chicken livers, cleaned and trimmed
  • 5-10 bird's eye chilies (adjust according to your spice preference)
  • 3-4 red chilies (medium heat), chopped
  • 5 shallots, chopped
  • 4 cloves garlic, chopped
  • 2 tomatoes, chopped
  • 1 tablespoon tamarind paste
  • 2 tablespoons vegetable oil
  • 1 teaspoon sugar
  • Salt to taste
  • Lime wedges for garnish
  • Fresh cilantro leaves for garnish

Instructions:

  1. In a food processor or mortar and pestle, grind the bird's eye chilies, red chilies, shallots, and garlic into a smooth paste. You can add a little oil to help with the grinding process if needed.
  2. Heat the vegetable oil in a pan over medium heat. Add the chili paste and sauté until fragrant, about 2-3 minutes.
  3. Add the chicken livers to the pan and cook until they are cooked through and browned on the outside, about 5-7 minutes.
  4. Once the chicken livers are cooked, add the chopped tomatoes, tamarind paste, sugar, and salt to the pan. Stir well to combine.
  5. Cook the mixture for another 5-7 minutes, or until the tomatoes are softened and the flavors are well combined. Adjust the seasoning if needed.
  6. Remove the pan from the heat and transfer the Sambal Ati to a serving dish.
  7. Garnish with lime wedges and fresh cilantro leaves.
  8. Serve the Sambal Ati hot with steamed rice or as a side dish to accompany your meal.
